
CARAMELIZED ONION, LEMONADE APPLE
AND ROAST SQUASH FLATBREAD

INGREDIENTS
1 large or 2 small-medium pizza dough bases, store bought or homemade
Topping
3 tablespoons olive oil
½ butternut squash, cut into chunks
2 Lemonade apples, cut into chunks
2 red onions, thinly sliced
1 tablespoon balsamic vinegar
1 tablespoon brown sugar
½ cup gruyere cheese
A few stems of rosemary
Handful of arugula to top
Salt, to taste
Pepper, to taste
DIRECTIONS
Preheat the oven to 400°F.
Toss the butternut squash and lemonade apple chunks with 1-2 tablespoons olive oil on a sheet pan. Season with salt and pepper and roast for 20 minutes in the oven, until almost tender. Remove from oven and increase the temperature to 475°F.
Heat 1-2 tablespoons olive oil in a medium-size pan over medium heat. Sauté for five minutes until the onions begin to soften. Add ¼ cup water to the pan and continue to cook for another 5 minutes. Add in the balsamic vinegar and brown sugar (add more water if mixture becomes dry) and continue to cook until onions are soft and caramelized.
Roll out the pizza dough on a lined baking sheet. Top with the caramelised red onions, roasted butternut squash and apple chunks, grated gruyere cheese, and rosemary.
Bake for 15-20 minutes, until the crust is golden brown. Top with arugula. Slice and serve immediately.
